Tofu in Gravy

4 tablespoons butter
3 tablespoons whole wheat flour
2 cups milk or broth
1 1/2 pounds tofu, mashed or cubed
1/4 cup tamari or soy sauceRecipe
Can use as a filling to serve over mashed potatoes or noodles. Pack in thermos. In a saucepan, melt butter and whisk in flour. Slowly add the milk while stirring over medium heat. When thick, add tamari and tofu and simmer gently for 5 more minutes.
