    note: You can substitute lamb, pork, or ham for the beef. Add any of the following to the croquette mixture; 1 tablespoon prepared mustard or horseradish; 1/4 cup minced ripe olives; 1/2 cup sautéed mushrooms; 2 tablespoons chili sauce; 2 tablespoons minced capers; dill pickle, or sweet green pepper; 1 crushed clove garlic.
    You can make these croquettes ahead and refrigerate or freeze them. Reheat on a baking sheet in a 350 degree oven.

    1/2 cup vegetable oil
    1 medium-size yellow onion, peeled and finely chopped
    3 tablespoons all-purpose flour
    1 cup beef broth
    2 cups very finely chopped cooked beef
    1/2 teaspoon salt
    1/4 teaspoon black pepper
    1/2 teaspoon dried thyme, crumbled
    1 tablespoon Worcestershire sauce
    1 egg, lightly beaten
    3/4 cup fine dry bread crumbs

    Heat 1/4 cup of the oil in a heavy 10-inch skillet over moderate heat. Add the onion and cook, covered, until soft - about 5 minutes. Stir in the flour, cook for 1 minute, then gradually stir in the beef broth. Cook, stirring, for 1 minute, or until smooth and thickened.
    Mix in the beef, salt, pepper, thyme, and Worcestershire sauce. Spread the mixture evenly in a buttered 8 x 8 x 2-inch baking dish.

    Chill in the freezer for 15 minutes, or until stiff enough to shape. Form the mixture into 4 oval patties about 3/4-inch thick. Dip them into the egg, then coat them with the bread crumbs.

    Rinse and dry the skillet. Heat the remaining oil in it over moderately high heat for 1 minute. Add the croquettes, and cook until brown - about 3 minutes on each side. Drain on paper toweling.
