MADEIRA SAUCE
1 tablespoon burgundy
1/4 teaspoon minced garlic
3 tablespoons finely chopped onion
3 tablespoons butter or margarine
3 tablespoons all-purpose flour
2 beef bouillon cubes
1 1/2 cups hot water
1/8 teaspoon red food coloring
1/2 teaspoon soy sauce
1/4 cup Madeira wine Recipe
In a medium saucepan, combine, burgundy, garlic, and onion; cook until wine evaporates. Add butter and cook until melted. Blend in flour and cook, stirring constantly, for 5 minutes. Dissolve bouillon cubes in hot water; gradually add to the flour mixture, stirring to blend. Simmer for 10 minutes, stirring occasionally. Stir in food coloring, soy sauce, and Madeira wine; simmer for 3 minutes. Strain through a fine sieve. Keep warm.
BEEF
1/4 cup butter or margarine
4 tenderloin of beef medallion
Hot cooked rice
In a large skillet, melt butter; add beef medallions and sauté to desired doneness.
Serve on a bed of hot rice and top with Madeira Sauce.
