Cayenne Chicken Fried Steak

2 1/2 cups flour, divided
2 teaspoons salt
1 teaspoon cayenne pepper
6 round or cube steaks, 1/2" thick -- (5-6 oz each)
3 beaten eggs
2 cups oil
2 1/2 cups milk
2 tablespoons chili powder
1 teaspoon garlic powder with parsley
3/4 teaspoon celery salt
1 beef bouillon cubeRecipe
Combine flour, salt and cayenne pepper in a large mixing bowl; set aside. Pound steaks between two sheets of waxed paper (or plastic wrap) to a º-inch thickness; reserve. Beat eggs in a medium bowl. Dip each steak in flour mixture, then in egg mixture and into flour again to coat evenly. Reserve leftover flour mixture. Heat oil in a large, deep skillet until temperature reaches 360ºF or until a drop of egg mixed with flour sizzles when dropped carefully into pan.
Fry the coated steaks until golden brown, turning once for a total of about 7 minutes. Drain lightly on paper towel; keep warm on a serving platter. Drain oil from skillet, leaving about 1 tablespoon. Add reserved flour mixture; mix well. Cook over medium heat, stirring constantly, until flour is browned. Remove from heat; add milk, garlic powder, celery salt, chili powder and beef bouillon cube. Return to heat; bring to a simmer, stirring constantly until gravy thickens. Serve immediately with cooked steaks. Serves 6.
