    Crisp Fried Beef Cutlets

    2 eggs
    1/2 teaspoon black pepper
    1 teaspoon salt
    3 tablespoons Parmesan cheese
    4 sirloin steaks -- 1/4 " thick
    2 tablespoons olive oil
    3/4 cup dried breadcrumbs
    2 tablespoons unsalted butter

    Pound steaks to 1/8 ". Beat eggs with fork until well blended. Separately, combine breadcrumbs, Parmesan, salt, and pepper. Dip cutlets in eggs, then in crumb mixture, patting to make stick. Place cutlets on rack set on cookie sheet, and refrigerate. Preheat oven to 140ºF. Heat oil over medium heat. Fry cutlets until crisp, about 2-3 minutes per side. Transfer to heatproof platter and keep warm until ready to serve.
