    Debra's Chicken Fried Steak

    List of Ingredients




    2 pounds round steak
    2 beaten eggs
    1/2 cup flour
    2 tablespoons cream
    1 teaspoon salt
    1/2 cup lard or oil
    1 teaspoon pepper
    1 cup fine cracker crumbs

    Recipe



    Mix flour, salt, and pepper. Pound well into both sides of steak. Cut into serving pieces. Beat eggs and cream. Heat oil in iron skillet over moderately high heat. Dip steaks in egg, then in cracker crumbs. Brown steaks well on both sides; reduce heat to medium. Cover and cook 15-20 minutes, till well done but not dry. Remove and drain. Saute sliced onion rings for garnish, if desired. Pour off fat to 3 T. Stir in 3 T. flour and cook a minute or two. Stir in 1/2 C. cream to form a paste. Add chicken stock slowly, stirring till smooth and velvety. Serve gravy over steaks.
