Meatballs: CLS's Meatballs

List of Ingredients
1 lb. lean ground sirloin
8 oz. ground veal
8 oz. ground pork
3 lg. eggs
1 1/2 c. dry breadcrumbs
1/2 cup milk
2/3 c. freshly grated parmesan cheese
1/4 c. chopped flat leaf parsley
1 tbl dried basil
1-6 large cloves garlic minced (you decide, it's a matter of taste - I tend to use 6)
1 tsp. salt
1/2 tsp. freshly ground black pepper
1/8 tsp. cayenne Recipe
Take all the ingredients, put in your kitchenaid mixer bowl, mix with the paddle until everything is incorporated. Form into a loaf, put in a pan, bake at 375 degrees F. for about 1 hour. OR form into meatballs about an inch or so (I like them small) in diameter, saute in batches until browned, then add to your sauce to finish cooking.
