    Millie's Garlic Beef Roast

    List of Ingredients




    1 3 pound rump roast (3 to 4)
    olive oil
    thyme
    coupla bay leaves
    cracked pepper
    garlic
    potatoes quartered
    onion quartered
    celery sliced
    carrots cut into thirds
    turnips quartered
    2 C beef broth

    Recipe



    Wash meat n pat dry. Rub down real good w/olive oil then cracked pepper ~ give it a good massage. Make slits on both sides of roast n slide garlic slivers down into the lil slices into the meat.

    Place meat on rack in roaster n scatter more garlic around it. Then throw yer potatoes around the meat (now I sprinkle a few garlic pieces in between the veggies too, but that’s just me) then the onions, carrots, celery n whatever else ya come up with. Sprinkle with a bit of thyme over, throw in a couple bay leaves n pour broth over.

    Stick in a preheated 500° oven for 10 minutes, then drop heat n roast, basting every 15 minutes til done, about 15 minutes/lb for lean meat n 20 minutes/lb for more fatty meat for med rare
