    Black Beans with Ham in Sour Cream

    2 cans black beans
    1 1/2 cups cooked ham, diced
    2 cups sour cream
    1/3 cup orange juice
    1 teaspoon dried mint, crumbled
    1/2 teaspoon salt
    1/4 teaspoon black pepper

    Recipe



    rinse beans and drain, then place in casserole. Preheat oven to 350ºF. Stir in ham, sour cream, orange juice, mint, salt and pepper. At this point, you can refrigerate covered casserole for up to 2 days. Bake the beans, covered, until heated through, 30-40 minutes. Serve as entree or use as side dish. Serves 6-8.
