Crawfish Casserole St. James

List of Ingredients
3 1/2 cups Milk
1/2 cup White roux
1/2 pound Cheddar -- grated
1/2 pound American cheese -- diced
1/4 cup Bell pepper -- diced
1/4 cup Onion -- diced
3 tablespoons Butter
4 tablespoons Pimientos -- diced
1 pound Crawfish tails
3 pinches Thyme
6 oz Egg noodles -- cooked
1/4 cup Seasoned Italian breadcrumbs
3 tablespoons Olive oil
Recipe
Heat milk and roux; whisk until creamy. Add cheese and allow to melt. Saute bell pepper and onions in butter and add to sauce. Add remaining ingredients except noodles, crumbs and oil. Place noodles in casserole and mix 1/2 sauce into noodles. Pour remaining sauce on top. Cover with crumbs and drizzle olive oil on top. Bake at 325ºF for 25 to 30 minutes.
