Monterey Beans & Corn Casserole

List of Ingredients
1 can light red kidney beans, rinsed and drained
1 1/2 cups grated nonfat cheese (mozzarella or cheddar)
1 can whole kernel corn, drained
1 can chopped green chiles, drained
1 dash Tabasco sauce
1 medium zucchini, sliced
1/2 cup cornmeal
1/2 cup skim milk
1/4 cup egg substitute
1 8 oz can tomato sauce
Recipe
Heat oven to 350ºF. In 9" glass casserole dish sprayed with nonfat cooking spray, combine beans, corn, 3/4 cup of cheese, tomato sauce, chiles and Tabasco; mix well. Top with zucchini. combine cornmeal, skim milk and egg; mix well. Pour over veggie mixture. Bake 40 minutes. sprinkle with remaining 3/4 c. cheese; continue baking 2-3 more minutes until cheese melts.
