    1 1/2 pounds beef -- cubed
    1 package mushrooms -- halved
    1 tablespoon flour
    1/2 cup nonfat plain yogurt
    2 large onions -- thinly sliced
    2 tablespoons paprika
    1 1/4 teaspoons salt
    1 cup brown rice

    Recipe



    In stockpot over medium high, cook beef in 1 tablespoon of oil, half at time, until well browned. Meanwhile, thinly slice onion and cut each mushroom in half. In drippings, cook onion and mushroom until lightly browned. Add more oil if needed. Then add paprika, and cook for 1 minute. Mix flour and 1 1/2 c. water, stir into onion and mix with salt. Return to meat pot; over high, bring to boiling. Cover and bake in 350ºF oven for 1 1/4 hours or until meat is fork tender. When done, stir in sour cream. Cook rice as labeled and toss with parsley. Serve all together. Serves 6.
