List of Ingredients
1 cup chicken broth
1 cup shredded cheddar
3 tablespoons unbleached flour
1 3/4 teaspoons dry mustard
3/4 teaspoon dried marjoram
1/8 teaspoon pepper
1 1/2 teaspoons butter or margarine
1 cup onion -- chopped
3/4 cup celery -- finely chopped
1/2 cup 2% low-fat milk
4 1/2 cups potato -- thinly sliced
3/4 cup lean smoked ham -- diced
Recipe
Place broth in a 2-cup glass measuring cup and microwave on high for 1 1/2 minutes, or until hot. Pour into a blender. Set aside 2 tablespoons Cheddar. With motor running, add remaining Cheddar to blender. Add flour, mustard, marjoram and pepper. Blend until smooth. In a round 2-quart microwave-safe casserole, combine butter, onions and celery. Cover and microwave on high for 2 minutes. Stir in cheese mixture, stirring vigorously until blended and smooth. Stir in milk and then potatoes. Cover and microwave on high for 10 minutes, stirring halfway. Stir in ham. Cover and microwave for 10 minutes, or until potatoes are just tender; stop and stir halfway. Sprinkle with remaining cheddar. Let stand for 3 to 4 minutes, or until cheese melts.
