Sausage and Rice Casserole

List of Ingredients
1 pound sage flavor pork sausage
1 cup sliced celery
1/2 cup chopped onion
1/4 cup chopped red and green peppers
1/2 cup sliced fresh mushrooms
1 can sliced water chestnuts
1 cup uncooked converted rice
2 cups chicken broth
1/2 teaspoon salt
1/8 teaspoon ground pepperRecipe
Brown sausage in heavy skillet over medium heat; transfer to a 2 1/2 quart greased casserole dish. In the drippings, saute veggies til lightly browned, then transfer to casserole. To casserole add water chestnuts, rice, broth and seasonings; mix well. Cover tightly and bake at 350ºF for 1 to 1 1/2 hours or until rice is fluffy and tender. Yield: 6 servings.
