Scalloped Ham & Cheese Potatoes

SAUCE:
2 tablespoons butter
2 tablespoons flour
3/4 teaspoon salt
1/4 teaspoon pepper
2 cups milk
CASSEROLE:
4 cups peeled 1/8" thick potato slices, divided
1 cup 1/8" thick carrot chunks, divided
1/4 cup chopped onion, divided
1 cup cooked cubed ham, divided
1 cup shredded sharp cheddar cheeseRecipe
For sauce, melt butter in small saucepan; stir in flour, salt and pepper. Cook, stirring constantly, for 1 minute. Gradually whisk in the milk; cook until thickened, then set aside. In a buttered 2 quart casserole, layer half of all veggies and ham; cover with half of sauce. Repeat layers. Sprinkle cheese over all. Bake covered at 350ºF for 1 hour. Uncover and bake 10 minutes more. Yield: 4-6 servings.
