    4 medium zucchini
    1 pound bulk sausage
    1/2 cup onion, chopped
    4 eggs, beaten
    2 cloves garlic, crushed
    1/2 teaspoon thyme
    1 cup saltines, crushed fine
    1 cup grated parmesan cheese

    Recipe



    Wash zucchini and trim ends. Cook whole zucchini in boiling salted water for 12 minutes. Drain and chop coarsely. In the meantime, cook sausage and onion over medium heat until brown. Drain and combine sausage and zucchini with rest of ingredients except for 1/4 c. parmesan. Spoon all into 3 quart casserole and sprinkle with remaining cheese. Bake at 350ºF for 1 hour.
