5 Minute Chicken Burritos

1 can (5-oz.) chunk chicken, drained
1 tablespoon fat-free mayonnaise
1 teaspoon lemon juice
4 flour tortillas
1/2 cup grated low-fat cheddar cheese
1 tomato, diced
1/4 cup chopped green onionsRecipe
In a small bowl, combine chicken, mayonnaise and lemon juice; set aside.
Steam tortillas between damp paper towels in a microwave oven, about 30 seconds on HIGH.
Spread the chicken mix in the center of each tortilla. Top with cheese, tomato and onion. Fold the bottom edge of the tortilla up, and roll the sides tightly to form a burrito. Serve immediately.
We like hot meals so I put the chicken, mayo,lemon juice, & onion in a skillet on med. heat just until it began to sizzle. Then I added 1/2 tsp. tobasco, dash of seasoned pepper, and a dash or 2 of Tony Chachery's seasoning. When I put it in the tortilla I added a bit of fat free sour cream, folded it up with the cheese and added shredded lettuce.
