Baked Chicken with Honey

1 cup raw long grain rice
2 1/2 cups chicken broth
6 boneless skinless chicken breast halves
1 cup plain nonfat yogurt
1/2 cup honey
2 tablespoons brown sugar
1 teaspoon soy sauceRecipe
Can be made up to 12 hrs ahead (then cover and refrigerate). Preheat oven to 375ºF, with rack in center position. Spray a casserole with nonstick cooking spray. Pour rice over bottom of prepared pan, then pour in broth. Layer chicken over rice. Combine remaining ingredients, mixing well, and spread over chicken. Cover loosely with foil and bake for 40 minutes. Remove foil and bake for 15 more minutes. Serves 6.
