    3 lb whole chicken -- (3 to 4)
    1 teaspoon coarse sea salt
    1 lemon
    1 tablespoon butter

    Recipe



    Preheat oven to 500ºF or higher if you can. Rinse chicken inside and out with cold water. Dry with paper towels. Rub cavity with salt. Place lemon in cavity. Rub the chicken all over with the butter - think of it as a massage. Place chicken in a roasting pan and put in oven. Reduce heat to 300 or 325ºF. Cook 20 minutes per pound, basting
    every 15-20 minutes. Don't overcook.
