Chicken Con Queso

1 1/4 pounds chicken breast halves, skinless
1 tablespoon oil
1/2 pound velveeta, cut up
2/3 cup picante sauce
1/4 cup sliced scallionsRecipe
With a kitchen mallet or a rolling pin, lightly pound the chicken to 1/2-inch thickness. In a large skillet, heat the oil over medium heat and cook the chicken for 8 to 10 minutes, or until the juices run clear and no pink remains, turning halfway through the cooking. Remove the chicken to a platter and cover to keep warm. Place the cheese, picante sauce, and scallions in the skillet and cook over medium-low heat until the cheese is melted, stirring frequently. Spoon the cheese mixture over the chicken and serve immediately.
NOTE: This is very saucy, so I like to serve it all over hot cooked rice. Want to add a little color? Garnish with finely chopped red and green bell peppers or fresh cilantro or parsley.
