2 boneless skinless chicken breast halves
salt and pepper to taste
1/2 teaspoon oregano
1 clove garlic, crushed
leftover meat sauce
grated mozzarella cheese
2 tablespoons olive oil
1 tablespoon balsamic vinegarRecipe
In a small glass container, marinate the chicken breasts with olive oil, balsamic, salt and pepper, oregano and crushed garlic. Let sit in fridge for at least 2 hours. Heat skillet and brown the chicken breasts well. When done, top the chicken breasts with left-over meat sauce and sprinkle generously, mozzarella cheese over. Lower heat to low and cover pan so that cheese will melt. Serves 2.
