1/2 cup bread crumbs
2 teaspoons rosemary
1 clove garlic, minced
Salt and pepper
3-1/2 pounds chicken pieces
1 pound plum tomatoes, chopped
2 zucchini, sliced
1/4 cup grated Parmesan cheese Recipe
Preheat oven to 425°F. Spray a 13x9-inch baking pan with non-stick vegetable spray. In a shallow dish, combine bread crumbs, rosemary, salt, and pepper. Dredge the chicken in bread crumb mixture. Place chicken, skin-side up in prepared baking pan. Bake for 15 minutes. Arrange tomatoes and zucchini over chicken; sprinkle with Parmesan cheese. Continue baking 15 minutes longer or until chicken and vegetables are tender. Serve immediately. Serves 4
