    Source of Recipe

Cooking Light, June 1995, page 110

    List of Ingredients

    1 1/4 cups cornflake crumbs
    1/4 cup sesame seeds
    3/4 teaspoon paprika
    1/4 teaspoon salt
    1/4 teaspoon ground ginger
    1 Dash ground red pepper
    1/2 cup plain nonfat yogurt
    2 tablespoons honey
8 skinned chicken breast halves (6-ounce)
    Vegetable cooking spray
    2 tablespoons reduced-calorie margarine melted
    Thyme sprigs (optional)

    Recipe

Combine first 6 ingredients in a large zip-top heavy-duty plastic bag; set aside.

Combine yogurt and honey in a shallow dish; stir well. Add chicken to yogurt mixture, turning to coat. Remove chicken from yogurt mixture; discard yogurt mixture. Add chicken to bag; seal bag, and shake to coat. Remove chicken from bag; place the chicken on a baking sheet coated with cooking spray, and drizzle melted margarine over chicken.

Bake at 400 degrees for 45 minutes or until done. Yield: 8 servings (serving size: 1 chicken breast half).

Notes: This is one of my favorite dishes to fix for friends; I never tell them it's light, and they never know the difference. -- Mary Baker, Mt. Pleasant, South Carolina.

Serving Ideas: Garnish with thyme sprigs, if desired.
