    Curried Pineapple Chicken

    List of Ingredients




    1/2 pineapple
    1 tbl honey
    2 tbl soy sauce
    2 tsp curry powder
    1 tsp garlic crushed
    1 tsp ginger crushed
    1 1/2 kg chicken (breasts, legs, thighs)
    1 cup chicken stock
    2 tsp cornflour
    3 onions medium
    2 tbl vegetable oil

    Recipe



    * Peel and cut onions into wedges. Cut 3/4 of the pineapple into 3cm cubes. Finely chop 1/4 of the pineapple.
    * Combine finely chopped pineapple, soy sauce, curry powder, garlic and ginger in bowl, add chicken. Mix well. Marinate 1 hour.
    * Drain chicken, brush with oil, and arrange pieces on a roasting tray. Cook in a hot oven for 25 minutes or until done.
    * Heat oil in a pan, add onion and quickly saute 1 minute, add chicken stock and marinade juices, bring to the boil. Dissolve cornflour in a little cold water, stir into sauce to thicken. Add diced pineapple and chicken, stir until heated through.
