    Dijon Chicken with Sliced Pears

    1/2 cup white wine
    2 tablespoons brown mustard
    1/4 teaspoon cayenne
    1 1/2 pounds boneless skinless chicken breast halves
    1/2 teaspoon salt
    1/4 teaspoon ground black pepper
    1/4 cup flour
    1 tablespoon olive oil
    1/2 cup chopped peeled onion
    2 pars, peeled, cored, sliced

    Combine white wine, brown mustard and cayenne pepper in a small bowl; set aside. Season chicken with salt and pepper; lightly dredge in flour and set aside. Drizzle oil over microwave-safe dish and arrange seasoned chicken in a single layer and top with onions. Microwave on HIGH for 4 minutes. Turn the chicken over and pour reserved wine mixture on top. Cover and microwave on MEDIUM for 6 minutes. Add sliced pears, cover, and microwave on HIGH until tender, about 2 minutes. Let stand for 5 minutes before serving. Serves 4.
