    Garlic Cumin Chicken Thighs

    8 chicken thighs skin removed
    1/2 teaspoon salt
    1/2 teaspoon pepper
    2 tablespoons butter or margarine
    16 cloves garlic
    1 tablespoon ground cumin
    1/3 cup finely chopped parsley
    4 lemon wedges

    Recipe



    Season the chicken thighs with salt and pepper.
    In a large skillet, melt butter.  Add chicken thighs and brown on one side; turn.  Add garlic; cover and cook, turning several times, for 20 minutes or until brown on both sides and opaque in the center.  Sprinkle both sides of the  chicken thighs with cumin.  Cook, turning once, until chicken thighs are crisp.
    Remove chicken to serving plates.  Spoon on garlic and drippings.  Sprinkle with chopped parsley and serve with lemon wedges.
