    Gingered Marmalade Chicken

    List of Ingredients




    1/2 cup orange marmalade
    1/2 cup orange juice
    1/2 teaspoon finely grated fresh ginger
    1 tablespoon dijon mustard
    1/8 teaspoon tabasco sauce
    1/2 teaspoon kosher salt
    1/4 teaspoon ground pepper
    2 small skinless breasts, bone in split

    Recipe



    Preheat oven to 350 degrees. Blend together all ingredients except for the chicken. Brush chicken all over with the marmalade mixture. Place in a heavy baking dish (not glass) and set in the center of the oven. Bake for 25 minutes. Baste with the sauce every 10 minutes. The basting sauce is also excellent on a whole roasted chicken.
