    List of Ingredients




    1 /4 tsp salt divided
    1 /4 tsp pepper divided
    4 skinless boneless chicken breast halves
    Cooking spray
    1/3 cup extra-dry vermouth
    3 tbsp lemon juice
    1 1 /2 tbsp capers
    1 tbsp chopped fresh parsley

    Recipe



    1. Sprinkle half of salt and pepper evenly over chicken. Place in a heated nonstick skillet coated with cooking spray over medium to high heat. Cook for about 6-7 minutes on each side or until done. Set aside.

    2. Add the other half of salt and pepper, along with the vermouth, lemon juice, and capers to skillet. Cook until it's reduced (about 2-3 minutes). Stir in parsley. Spoon mixture over chicken and serve with pasta or long-grain rice.
