Outback's Alice Springs Chicken, Simplified

boneless chicken breasts
Wishbone honey dijon salad dressing
lots of grated cheddar cheese
lots of grated Monterey jack cheese
lots of bacon
fresh mushrooms, sliced
Recipe
Marinate boneless chicken breasts in bottled honey-dijon salad dressing at LEAST several hours. (I have used Wishbone. It seems to taste most like the Outback's dressing and using fat-free makes NO difference in the taste but saves on the fat.) Grate a LOT of cheddar cheese and a LOT of Monterey jack cheese. Fry an ample amount of bacon. Saute some fresh mushrooms. Doing this in advance makes dinner time a LOT less hectic.
When you're ready to make dinner, toss the chicken on the grill and cook until just done. Bring it inside and put on a cookie sheet. Layer mushrooms, bacon, and then TONS of both cheeses on the chicken breasts (I shove them close to each other so the melting cheese isn't wasted on the cookie sheet. It also keeps them from drying out.) Put in the oven until the cheese melts. DO NOT put under the broiler. It will burn the cheese before everything is heated through. Remove from oven when the cheese is nice and gooey.
This recipe is WONDERFUL with Uncle Ben's White and Wild rice mix and a bag o' salad!
