4 boneless skinless chicken breast halves
2 tablespoons olive oil
20 ounces chili (without meat)
1/4 cup BBQ sauce
1/2 cup salsa
1 teaspoon Mongolian fire oil
minced garlic to taste
1/2 cup olives
2 cups sharp cheddar cheese (shredded)
2 medium tomatoes
Tabasco, salt and pepper to taste
Recipe
Place chicken in an ungreased, oven safe, baking dish. Mix all other ingredients (except cheese) in a bowl, mixing evenly. Pour mix over chicken covering completely. Allow chicken to sit in sauce for 1 hour (in the refrigerator). Pre-heat oven to 400ºF, and bake 1 hour 15 minutes. We serve this dish with the chicken covered with the sauce, with a rice/corn side. Add the cheese to taste over the chicken.
