    List of Ingredients




    1/2 cup egg beaters® 99% egg substitute
    4 chicken breasts, bone and skinned -- cut into bite size
    1/2 cup flour
    1/3 cup chicken broth
    1/4 teaspoon pepper


    Sauce:
    1 1 lb can pineapple, undrained
    1 cup sugar (or 1/2 c. sugar + 6 pkts swt n low)
    2 tablespoons cornstarch
    3/4 cup cider vinegar
    1 tablespoon soy sauce
    1/4 teaspoon ginger
    1 chicken bouillon cube
    1 large green pepper, cut bite size pieces
    2 cups cooked white rice

    Dip chicken into egg beaters, then into flour mixed with salt and pepper. Coat well. Heat chicken broth in nonstick skillet and brown chicken pieces. Preheat oven to 350ºF. Drain pineapple, pouring liquid into a 2c. measure. Add water to make 1 1/4 c.

    In medium saucepan, combine sugar, cornstarch,pineapple syrup, vinegar, soy, ginger and bouillon. Bring to a boil. Boil and stir 2 minutes. Pour over chicken pieces placed in glass 9x11 casserole dish (sprayed w/ nonfat cooking spray). Bake uncovered 30 minutes. Add pineapple chunks and bell pepper. Bake 30 minutes more or till chicken tender. Serve with rice.
