    1/2 cup mayonnaise
    1/4 cup plain yogurt
    3 canned flat anchovy fillets, drained
    1 tablespoon dried capers
    2 tablespoons fresh lemon juice, or to taste
    3 whole chicken breast, halved, boned, poached
    6 1/2 ounces white tuna in oil, drained
    1/2 cup + 2 tbl. fresh basil, chiffonade
    1 thin sliced lemons for garnish

    In the bowl of a food processor, process the tuna, mayonnaise, yogurt, anchovies, capers and lemon juice. Fold in the 1/2 cup basil and chill the sauce for 3-4 hours. Wrap each poached chicken breast tightly in plastic wrap to make a neat little package (cannot skip this step); chill the breasts for at least 2 hours. Slice each breast on the diagonal and fan the slices slightly on each plate. Nap them with the sauce. Decorate each sauced piece of chicken with the lemon slices, and the remaining 2 tbl. basil. Serves 6.
