Armenda's Chicken Chili

4 cooked chicken breasts chopped
2 cans NSA diced tomatoes
1 can NSA diced tomatoes w/ chilies Rotel
2 small cans tomato sauce (no salt added)
1 large onion chopped
2 bell peppers chopped
3 cloves garlic pressed
4 teaspoons Chili Powder
1 teaspoon Cumin
2 Bay leaves
1/2 teaspoon Cayenne
2 teaspoons Splenda or brown sugar substituteRecipe
Boil and cut chicken breast and set aside. Saute onions, peppers and garlic in skillet with lid on to preserve moisture, stirring occasionally. Set aside. In large pot, combine tomato products, spices and sweetener. Bring to light boil and reduce to a simmer. Add onion mixture and chicken. Cover and let simmer 30 minutes. Reheated leftovers next day are even better.
