    Debbie's Cheese Enchiladas

    List of Ingredients

    1 dozen corn tortillas
    1 pound mixed shredded cheddar and mozzarella
    1 small onion

    RED SAUCE:
    2 tablespoons shortening
    2 tablespoons flour
    2 tablespoons chili powder
    1 cup tomato sauce
    2 cups water
    garlic salt and cumin to taste

    Recipe

    Prepare sauce: Melt shortening in a heavy pan. Mix together the flour and chili powder and add to the pan. Cook on medium heat until it begins to brown, stirring constantly. Add the sauce and seasoning. Stir well. Begin to add the water, stirring constantly, until it is the thickness of gravy. Reduce the heat to simmer and cook for 1/2 hour, adding water if it becomes to thick.

    Make enchiladas: Mix together the cheese and onion. Set aside. Heat 6 corn tortillas in the microwave on High for 45 seconds. Dip the tortillas in the sauce, and place a handful of the cheese into the center and roll up like a log. Place in a greased pan and pour remaining sauce over all.Top with some cheese. Bake for 20 minutes in a 350ºF oven.
