Salmon: Arrow's Plank Roasted Salmon

List of Ingredients
4 seven ounce salmon fillets or one 2 lb. salmon fillet, skin on
1 cup + 2 tbl. olive oil
kosher salt and fresh ground black pepper
1 untreated pine or other wood plank
1 big enough to hold fish and 1" border
1/4 cup fresh tarragon leaves
1/4 cup fresh parsley leaves
1 shallot, peeled and chopped
8 black peppercorns
1 teaspoon Dijon mustard
2 tablespoons red wine vinegar
Recipe
Can use salmon or other dense white fish (halibut, sea bass, sturgeon). For wood, use untreated wood, any soft or hardwood. If you want to add an herb flavor to the fish, place a bed of fresh thyme or tarragon on wooden plank and place the fish on top. Preheat oven to 450ºF.
Rub salmon with 2 tbl. oil, salt and pepper. Place the salmon, skin side down, on the plank. Set the plank on a baking sheet to keep the juices from spilling. If you can t find a wood plank, place fish directly on a baking sheet. Roast salmon until opaque in center, about 12 minutes. Place 1 c. olive oil, tarragon, parsley, shallot, peppercorns, mustard, vinegar and salt in blender or food processor and puree. Taste for seasoning and serve with the hot salmon. Serves 4.
