Catfish: Baked Catfish

2 pounds catfish fillets, rinsed and dried
3/4 cup lowfat buttermilk
1/4 teaspoon salt
1/4 teaspoon hot pepper sauce
30 whole wheat crackers, crushed
2 tablespoons margarine, melted
Recipe
Combine buttermilk with salt and hot pepper sauce in a shallow dish. Place the cracker crumbs on a plate. Dip catfish in milk mixture, then roll in crumbs to coat. Place in a baking dish which has been sprayed with nonstick spray. Drizzle with margarine. Bake at 400ºF for 15 to 20 minutes, until fish flakes with a fork. Serve with lemon wedges. Serves 6
