Salmon: Baked Salmon with Goat Cheese and Herbs

6 salmon fillets (6 oz each)
1/4 cup fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
6 tablespoons olive oil
2 garlic cloves, crushed
6 ounces soft goat cheese, room temperature
3 tablespoons minced fresh tarragon leaves
3 tablespoons snipped fresh chives
Recipe
Place salmon fillets in a shallow glass baking dish just large enough to accommodate them. Remove any bones with clean tweezers. Mix lemon juice, 1/4 tsp. salt and 1/4 tsp. pepper in small bowl. Gradually whisk in oil. Mix in garlic and pour over fish. Cover and refrigerate for 2 hours, turning fish several times.
Arrange rack at center position and preheat oven to 450ºF. Cover a heavy baking sheet with foil. Spray lightly with cooking spray and place fish, skin side down, on foil. Bake until opaque, 9-12 minutes. Meanwhile, beat cheese until soft and smooth. Mix with 1 1/2 tbl. each of tarragon and half of chives. Remove fillets from oven and remove and discard the skin. Transfer fish to a platter, season with salt and pepper to taste. Place a generous dollop of cheese mixture on top of each fillet. Sprinkle with remaining herbs. Serves 6.
