Salmon: Broussard's Pecan Stuffed Salmon

List of Ingredients
4 cups fine bread crumbs
5 salmon fillets (6 ounces each)
FILLING:
4 cups pecan pieces
2 cups fresh chopped parsley
2 cups thinly sliced green onions
1/2 cup lemon zest
1 cup lemon juice
4 cups salmon fillets (6 oz. each)
salt and pepper to taste
Recipe
Mix above ingredients well. Take five 6 ounce filets, cut pocket down the middle and into sides and stuff with pecan mixture. Roast in 400ºF oven for about 10 minutes.
