Squid: Calamari

List of Ingredients
3 pounds calamari, cleaned and cut
1/4 cup white wine
1 tablespoon crushed garlic
1 teaspoon dry basil
1 bulb roasted garlic
1/3 cup olive oil
1/4 cup dry sherry
1/2 lemon
1 teaspoon dry oregano
1 egg beaten (add 1 tsp water)
bread crumbs, to coat calamari
Recipe
Roast the garlic bulb, then remove cloves and slice. Dip calamari in egg and then coat with crumbs. In large skillet, heat olive oil at high heat. Add wine and sherry and saute the crushed garlic. Squeeze lemon juice into the pan. Sprinkle herbs over and add the calamari and roasted garlic. Saute approx 4 minutes on high heat. Don't overcook.
