Sole: Creamy Dijon Sole

1 small onion -- thinly sliced
1 pound sole or flounder
4 tablespoons plain nonfat yogurt
2 tablespoons Dijon mustard
2 tablespoons olive oil
1 tablespoon dry white wine
1/4 teaspoon tarragon
Recipe
Spray shallow non-stick baking pan with cooking spray and arrange thin layer of onion slices. Place fish fillets on top in single layer. Combine remaining ingredients and spread evenly over fish. Bake uncovered in a 475ºF oven for 7 to 9 minutes. Makes 4 servings.
