Crispy Baked Fish

1 1/2 pounds flounder fillets
1 egg white
1 tablespoon water
3/4 cup corn flake crumbs
1/8 teaspoon lemon pepper
2 teaspoons chopped fresh parsley
2 tablespoons butter
Recipe
Preheat oven to 400ºF. Lightly spray a shallow baking pan with vegetable spray. Rinse fish and pat dry. In a small bowl, beat the egg white with water. Dip the fish in the egg white, then roll in the crumbs. Arrange fish in a baking pan. Sprinkle with lemon pepper and parsley, then drizzle the butter over the fillets. Bake, uncovered, 20 minutes or until the fish flakes easily with a fork. NOTES : This works well with all white fish.
