    Salmon: Crumb Topped Salmon

    List of Ingredients

    1 1/2 cups soft bread crumbs
    2 tablespoons fresh minced parsley
    1 tablespoon fresh thyme, minced
    2 cloves garlic, minced
    1 teaspoon grated lemon rind
    1/2 teaspoon salt
    1/4 teaspoon lemon pepper seasoning
    1/4 teaspoon paprika
    4 salmon fillets (6 oz each)

    Recipe

    In a bowl, combine the first eight ingredients; set aside. Pat salmon dry. Place skin side down, in a 13"X9"X2" baking dish coated with nonstick cooking spray. Spritz salmon with butter-flavored spray. Bake, uncovered, at 350ºF for 15-20 minutes or until fish flakes with a fork. Yield: 4 servings
