Squid: Deep Fried Squid Rings

2 pounds cleaned squid bodies
oil for deep frying
1/2 cup flour
1 teaspoon salt
1/8 teaspoon pepper
2 eggs
1 cup mild picante sauce
1 1/2 cups flavored bread crumbs
Recipe
Cut squid bodies into 1/2" wide rings. Rinse well under cold running water to remove any sand. Heat oil to 375ºF. In plastic bag, combine flour, salt and pepper. Add a few of the squid rings at a time, shake until well coated. In shallow bowl, combine eggs and milk, beating with fork until well blended. Dip floured squid rings in egg mixture, then bread crumbs until well coated. Fry a few squid rings at a time, about 45 seconds or until golden brown. Drain and keep warm. Repeat until all squid is fried. Serve with cocktail or tartar sauce.
