    Shrimp: Garlicky Baked Shrimp

    List of Ingredients

    1 1/4 pounds medium shrimp -- peeled and deveined
    1/2 cup dry breadcrumbs
    3 tablespoons finely chopped fresh parsley
    1 teaspoon grated lemon rind
    1/4 teaspoon salt
    3 cloves garlic -- minced
    2 tablespoons fresh lemon juice
    4 teaspoons olive oil

    Recipe

    Coat 4 individual gratin dishes with cooking spray. Divide shrimp evenly among dishes; set aside. Combine the breadcrumbs, parsley, lemon rind, salt, and garlic in a bowl; stir in lemon juice and oil. Sprinkle the breadcrumb mixture evenly over shrimp. Place dishes on a baking sheet. Bake at 400ºF for 13 minutes or until shrimp are done and breadcrumbs are lightly browned. Yield: 4 servings.
