Shrimp: Garlicky Shrimp & Cannellini Beans

16 ounces canned white beans, drain and rinse
2 tablespoons extra virgin olive oil
minced clove of garlic
water or chicken broth
8 ounces peeled shrimp, cut 1/2" pieces
1/4 cup chopped fresh parsley or basil
salt and crushed red pepper flakes
Recipe
Simmer beans, olive oil and garlic for 10 minutes. Add some water or chicken stock to make the mixture soupier. Add shrimp, cover and simmer 5 minutes or until shrimp turns pink. Add parsley and season well to taste with salt and crushed red pepper. Yield: 2 servings
