    Scallops: Lowfat Scallops

    List of Ingredients

    For each serving:
    1/4 pound scallops
    4 pieces ginger, shredded
    1 scallion, sliced thin
    1/4 carrot, shredded
    1 small shallot, chopped
    1 teaspoon butter
    1 tablespoon lemon juice

    Recipe

    Preheat oven to 350ºF. For each serving, place all ingredients on large piece of foil in following order: scallop first... carrot, shallot, scallion and ginger on top of scallops... butter and lemon juice on top. Fold foil over ingredients like a small tent and seal edges. Put foil pouches on baking sheet and bake for 18-20 minutes. Serve pouches closed allowing each person to open their own.
