Shrimp: Lowfat Scampi

1 tablespoon + 1 tsp olive oil
1 pound shelled and deveined shrimp, tails on
1/2 cup chicken broth
1 tablespoon minced garlic
1/2 cup dry white wine
1/4 cup fresh lemon juice
1/4 cup minced parsley
1/4 teaspoon salt and black pepper
Recipe
In large skillet, heat oil. Add shrimp and cook, stirring constantly, over high head for 2 minutes or until just pink. Add garlic and cook, stirring constantly, about 30 seconds. With a slotted spoon, transfer shrimp to serving platter and keep hot. To same skillet, add wine, broth, lemon juice, parsley, salt and pepper; increase heat to high. Boil uncovered until sauce is reduced by half. Spoon over shrimp. Serves 4.
