    Shrimp: Microwave Shrimp Curry *

    List of Ingredients

    1 cup diced celery
    1/2 cup chopped onion
    1/4 cup butter
    5 tablespoons flour
    1 teaspoon salt
    1 teaspoon curry powder
    2 tablespoons sherry
    1/8 teaspoon ginger
    2 chicken bouillon cubes
    2 cups hot water
    1 pound cooked shrimp, drained
    1/2 teaspoon sugar
    1/2 teaspoon lemon juice

    Recipe

    In casserole, combine celery, onion and butter. Cover and cook on high for 6-7 minutes til onion and celery are limp. Stir in flour, salt, curry, sugar and ginger. Cover and cook on high for one minute. Dissolve bouillon in water; add gradually to flour mixture, stirring until smooth. Cover and cook on high for 5-7 minutes, til thickened, stirring occasionally. Add shrimp and lemon; cover and heat on high for 2-3 minutes. Stir in sherry. Serve over hot rice.
