Scallops: Parmesan Baked Scallops

1/2 pound large scallops
1/4 cup plain breadcrumbs
1 teaspoon butter
1/4 cup white wine
2 tablespoons grated parmesan cheese
1/4 cup chopped fresh parsley
Recipe
Preheat oven to 350ºF. Rinse scallops and place in a small baking dish just large enough to hold them in one layer. Sprinkle with bread crumbs, and toss to coat. Cut butter into bits and divide among the scallops. Add wine to dish, and bake for 15 minutes. Remove from oven and turn on broiler. Sprinkle scallops with parmesan and place under broiler for 5-10 seconds. Watch carefully as they will brown quickly. Season with salt and pepper to taste. Good served with spinach linguine and carrots. serves 2.
