    Salmon: Poached Salmon with Mustard Sauce

    List of Ingredients

    2 tablespoons plain nonfat yogurt
    1 teaspoon dijon mustard
    1/4 teaspoon sugar
    1 tablespoon mayonnaise
    1/8 teaspoon ginger
    1 1/2 pounds salmon fillet

    Recipe

    In small bowl, combine yogurt, mayo, mustard, ginger and honey; set aside. Rinse salmon in cold water and pat dry with paper towel. Lay fish in single layer in a pan at least 2: deep. Add cold water just to cover fish. Lift out fish and bring the water to a boil. Return fish to pan and reduce heat to keep water barely simmering. Simmer until fish is just translucent slightly in center, about 8 minutes. Remove fish, drain and pat dry. Set fish on plates and spoon sauce over fish.
